Basic Beef Roast

Ingredients

  • 2 lb beef roast, fresh or thawed (Chuck, Shoulder, or Bottom Roast)
  • 1 large onion
  • ½ cup beef broth or water
  • 2 tbsp garlic, minced

Directions

  1. Place chopped onion, minced garlic and beef broth or water in slow cooker and add the roast beef. Cover with lid and cook on low for 9-10 hours or on high for 5-6 hours, or until the roast is fork-tender.
  2. Remove the roast from the slow cooker. Skim fat from cooking liquid, if necessary, and reserve 1 cup of the onion mixture. Shred the beef with two forks. Combine the shredded beef with the reserved onion mixture. Season with salt and pepper if desired.
